September’s Cookin’

There are still so many different recipes that I want to try and it really does not help that I keep adding to it.

This month I started off by making Cherry Vanilla Almond Cupcakes for my sorority’s bid night.  I doubles the batch thinking that I would get about 30 cupcakes, which is about the perfect amount to make for them, but I ended up getting almost 50 cupcakes that I had made from the batch! Now, don’t get me wrong they were some really really good cupcakes, but if you do not need to make that many, I would suggest not doubling the mix and just using the recipe straight up.  If you are not a fan of Cherry flavoring, I would suggest not using this recipe either because the cherry flavor overpowers the vanilla and the almond.

The other recipe that I made this month was Caprese Balsamic Grilled Chicken.  Except, living in a two bedroom college apartment I do not really own a grill so I just cooked the chicken on the stove (which still worked really well).  I also skipped the whole basil ingredients of the recipe. You do not have to use a lot of the balsamic dressing if you are not into the taste of it all.  I know for me, I am still trying to branch myself out of the whole only ranch as a salad dressing situation, so I used only a little bit to cover the chicken.  It also cooks out a little bit, so you don’t really taste it.  I’m not a big fan of cooked veggies, so I put my cheese on it to melt then the balsamic then when it was finished I topped it with tomato.  It was super yummy and a delicious way to eat a plain jane piece of chicken.

August, the start of it all

So, if you know me you then know that I am a very picky eater who is particular on how her food is placed and made.  AKA no food touching, no raw meat, etc.  Well, I am going into my last year on campus before student teaching and I have a Pinterest and am uber obsessed with it.  For those of you that do not know what a pinterest is: it is basically a site where you can get creative ideas on foods, decorating your home, clothing, and more.  I like to build my own dream closet and house along with finding some interesting recipes that usually I just thought looked good, but never really had the intention of actually making it.  I am usually eating the same foods because I am too much of a chicken to get out of my comfort zone and actually try something.  Well, after traveling to Europe this past summer I have done nothing but try new things.  So, this year I decided that I would make at LEAST ONE pinterest recipe each month.

My very first recipe was most certainly a bust. bummer, but remember this is just my taste buds and how I like my food.  You may actually like this dish.  I made parmesan sweet potato fries with a siracha and sour cream dip (fancy I know).  Anyways, I thought that the fries would come out crispy on the outside and normal on the inside, but they didn’t.  Now, maybe it was because I followed the recipe and used the oven instead of a deep fryer, but the fries were not what I was hoping for them to be.  Now, the sauce though I thought was perty great.  It gave them a little kick than using normal ketchup or mustard for your fries and it was really easy to make.  If you would like the try the recipe here is the link for you to try and give it your own rating.

Now, this month I decided to do more than one.  This time I choose to make a dessert. Peanut Butter Dream Bars and let me tell ya they are dreamy.  It is a peanut butter cookie base for the crust with chocolate pudding and a peanut butter cream cheese layer topped with whip cream, chocolate chips, and peanut butter chips. (WOAH!)  I ended up doubling the recipe since I was making it for my family cookout (and if you know my family you know that it is huge and that we like to eat).  I used a lot of low fat or sugar free items mainly because 1) they are “better” for you and 2) my gram can’t eat a lot of sugar and if you’re gonna make something you best make it so all can eat. Am I right? I would have to say that it still turned out really well and was one heck of a crowd pleaser.  If you are looking for a dessert, I would suggest this one for sure 😉
